Cabernet Sauvignon

G rown on the top of Uberland Hill (250 m above sea level) right next to the Recas winery, an area that forms natural plateau which is exposed to the sun all day long. Harvested early morning to avoid the sweltering heat of last years harvest period, the grapes were then gently crushed directly into stainless steel fermentation tanks. Following this the wine was directly inoculated with selected yeast for fermentation at 28 C, which took 2 weeks, before being pressed just before the wine was dry in order to preserve fruit flavour. A light and short use of oak- just enough to give a hint of vanilla toast, and the wine was ready for bottling.
